This recipe by Julie Bavant, rich in minerals, antioxidants and fibres, will provide you with the elements necessary to preserve your skin from ageing, while stimulating microcirculation. 

This purple salad recipe is ideal for fans of our treatment cosmétique-à-boire Longévité. Its ingredients will optimize the effects of the treatment on the skin's youthful appearance. They create a synergy of action with the active ingredients in the ampoule, such as collagen and maqui berry


Ingredients for two people: 
- ¼ of red cabbage
- 2 beets
- 1 red onion
- hibiscus for infusion
- orange and lemon peel
- 1 vanilla pod
- 2 tablespoons of coconut sugar
- cider vinegar
- walnut oil
- olive oil
- tamari

 

Preparation of the grated raw red cabbage
- Cut the red cabbage into quarters (one quarter is enough for two people).
- Cut the quarter with a knife into very thin strips.
- Season it with a pinch of salt, cider vinegar and a good nut oil.

 

Preparation of the roasted beetroot
- Preheat your oven to 180°.
- Brush your whole, unpeeled red beets under running water.
- Put some olive oil on your hands and massage the washed beetroot to coat it with oil.
- Put them in the oven for at least one hour.
- To check that your beetroot is cooked properly, the skin should be crumpled and the tip of a knife should be able to enter the beetroot flesh without resistance. 
- Wait for the beetroot to cool and then peel it by hand. 
Our chef's responsible advice: roasted beetroot can be kept for at least 3 days in the fridge, so don't hesitate to cook several. Why not cook them in the same oven as the mushrooms and carrots in the previous recipe? This will save you time and energy!

 

Preparation of the candied onions
- In a frying pan, place peeled red onion wedges in a base of water with olive oil and a drop of balsamic vinegar.
- Leave to compose, turning the quarters from time to time.
- Feel free to add a little water or oil or vinegar as you go along.
- When the onions are cooked through, leave to caramelise for a few more minutes.
- Make a reservation.

 

Preparation of the hibiscus reduction vinaigrette
- Make an infusion of hibiscus, to which you add lemon and orange peel, a few black peppercorns, a vanilla pod, and two tablespoons of coconut sugar (or whole cane sugar).
- Leave to infuse for at least 30 minutes before straining.
- Once filtered, reduce your infusion over low heat, at least by half. The aim is to obtain a syrupy, slightly sweet texture with a very concentrated taste of hibiscus and spices.
- Once the desired consistency is reached, allow to cool.
- Just before serving, add tamari to taste and a tablespoon of sweet olive oil.
- Emulsify like a vinaigrette.
- Arrange the other elements in a shallow dish.
- Pour the vinaigrette over the whole.

- The vegetable oils (rapeseed oil, olive oil, sunflower oil, hemp oil, linseed oil, etc.) are valuable sources of Vitamin E and essential fatty acids such as omega 3, 6 and 9. Their équilibre content varies from one vegetable oil to another, but what counts is the quality of the oil (first cold-pressed) and its diversity. The fatty acids provided will strengthen the skin's barrier and preserve its hydration, which is essential for preserving its youthfulness.
