This recipe by Julie Bavant is the perfect way to start the day while beautifying your skin. This chia parfait, made with plant milk, is packed with antioxidant ingredients to revitalise and strengthen your skin as soon as you wake up.

Ingredients for two people
To make this gourmet breakfast, you will need :
- 4 tablespoons chia seeds
- 250ml of plant milk of your choice
- 1 teaspoon matcha tea
- 1 tablespoon of coconut sugar
- 2 vegetable yoghurts
- 1 mango
- 2 mint leaves

The benefits of the ingredients 
- The chia seedsThey are rich in fatty acids, omega 3 as well as calcium and potassium. They are known for their ability to provide antioxidants and amino acids, which help to rebuild key skin proteins such as elastin and collagen. Its rich composition in omega 3, allows to reinforce the hydrolipidic barrier of the skin, which protects it from external agents.
- The matcha teaMatcha tea is a powerful natural antioxidant rich in catechins and tannins, powerful polyphenols that help reduce inflammation and protect skin proteins from degradation. Matcha tea is a precious ally of the skin because it will help it to defend itself against external aggressions (pollution, tobacco, etc.). In addition, it boosts the skin's structure by protecting collagen and elastin, molecules that are necessary for the skin's good health and its firm yet supple appearance.
- The vegetable coconut milkIt is rich in protein and calcium. It is also known for its richness in fatty acids, which the skin needs to strengthen the skin barrier. 
- The mangoMango is a fruit rich in fibre, vitamins and polyphenols. 100g of mango provides you with more than 30% of your recommended daily intake of vitamin C. This rich composition makes it an ideal partner for protection against pollution. Be careful not to abuse it, as it is a fruit rich in sugar. Other fruits can be substituted, such as citrus fruits or red fruits, which are rich in antioxidants. 

 

Preparation
- Soak the chia seeds in the vegetable milk of your choice, add a nice teaspoon of good quality matcha tea and, if you like, a tablespoon of coconut sugar. 
- Mix well with a fork and leave to stand in the fridge for about 20 minutes.
- Once the chia has swollen, pour a heaping tablespoon into the bottom of a glass. Cover with vegetable yoghurt, sweetened to taste.
- Finish with a final generous tablespoon of chia pudding. Set aside in the fridge while you cut a mango into nice cubes.
- Serve with a nice portion of fresh mango and some mint leaves.

The little extra: you can flavour your yoghurt or chia pudding with a few zests of yellow lemon or a hint of vanilla bean scraped off.
