Ingredients for two people
To make this gourmet breakfast, you will need:
- 4 tablespoons chia seeds
- 250ml plant milk, the one of your choice
- 1 teaspoon matcha tea
- 1 tablespoon coconut sugar
- 2 plant yogurts
- 1 mango
- 2 mint leaves

- Chia seeds are rich in fatty acids, omega-3s, calcium and potassium. They are renowned for their ability to provide antioxidants and amino acids, which help rebuild key skin proteins such as elastin and collagen. Its rich omega-3 content reinforces the skin's hydrolipidic barrier, protecting it from external agents.
- Matcha tea is a powerful natural antioxidant, rich in catechins and tannins, powerful polyphenols that help reduce inflammation and protect skin proteins from degradation. Matcha tea is a precious ally for the skin, helping it to defend itself against external aggressors (pollution, tobacco, etc.). It also boosts the skin's structure by protecting collagen and elastin, the molecules needed to keep skin healthy, firm and supple.
- Vegetable coconut milk is rich in protein and calcium. It is also recognized for its richness in fatty acids, which the skin needs to strengthen the cutaneous barrier.
- Mango is a fruit rich in fiber, vitamins and polyphenols. 100g of mango provides over 30% of your recommended daily intake of vitamin C. Its rich composition makes it an ideal partner for protection against pollution. Be careful not to overdo it, as it's a high-sugar fruit. Other fruits can be substituted, such as citrus or red fruits, which are rich in antioxidants.
Preparation
- Soak the chia seeds in the vegetable milk of your choice, add a teaspoon of good quality matcha tea and, if you like, a tablespoon of coconut sugar.
- Mix well with a fork and leave to stand in a cool place for twenty minutes.
- Once the chia has puffed up, pour a heaping tablespoon into the bottom of a glass. Cover with vegetable yoghurt, sweetened to taste.
- Finish with a generous final tablespoon of chia pudding. Chill while you cut a mango into nice cubes.
- Serve with a generous portion of fresh mango and a few mint leaves.
The little extra: you can flavour your yoghurt or chia pudding with a few zests of yellow lemon or a hint of vanilla bean scraped off.
